Ingredients:
3 lbs red tomatoes
½ small onion or scallions
1 green pepper
1 small cucumber
1 small bread roll
Olive oil
White wine, vinegar
Water
Salt and pepper
Garnish:
Green or red pepper
Tomato
Hard boiled egg
Preparation:
- Soak bread roll in water.
- Peel and roughly chop tomatoes then chop onion, pepper and cucumber
- Blend vegetables and strain. Squeeze the water out of the bread roll and add to the above mixture
- Leave to cool for at least 2 hours
- To serve, garnish with chopped tomato, pepper and egg
