    WORLD RECIPES - Gazpacho

Source Country: Spain
Preparation Time: 10 minutes
Cook Time: 2 hours

Ingredients:
3 lbs red tomatoes
½ small onion or scallions
1 green pepper
1 small cucumber
1 small bread roll
Olive oil
White wine, vinegar
Water
Salt and pepper

Garnish:
Green or red pepper
Tomato
Hard boiled egg

Preparation:

  1. Soak bread roll in water.
  2. Peel and roughly chop tomatoes then chop onion, pepper and cucumber
  3. Blend vegetables and strain. Squeeze the water out of the bread roll and add to the above mixture
  4. Leave to cool for at least 2 hours
  5. To serve, garnish with chopped tomato, pepper and egg
